De Gel vintage:2023 Sea and skyThe Premsal Blanc grapes for 7103 de Gel are hand picked from the vineyards. The grapes are then frozen in crates at 25C and then pressed to produce a sweet must. Fermentation is initiated very slowly and stopped when the desired alcohol content is reached. This ensures a perfect balance between residual sugar and the alcohol extracted. This is how the fruity, aromatic ice wine from 7103 Petit Celler is created!
